Cranberry and brie bites – Christmas recipe with or without a Thermomix

Cranberry and brie bites are so easy to make, I’ve made them so many times for parties. They are incredibly simple to throw together yet always get polished off in minutes. I just love how beautiful and tasty they are.

If I am perfectly honest, I cheat all the way with this recipe – shop bought puff pastry and ready-made cranberry sauce.  With a little help from your Thermomix, you could easily home make both.

Two salmon pate – Christmas Thermomix recipe

Two salmon pate – Christmas Thermomix recipe

Whip up this creamy, delicious salmon pate in no time, great served as a dip or as a starter with blinis or toasted sourdough.

Serves 8 to 10 as a starter, more as a dip

Active time: 5 minutes – Total time: 20 minutes

  • 750g fresh salmon
  • 125g smoked salmon
  • 1/2 lemon juice
  • Zest of one lemon
  • 2 egg yolk
  • 100g Greek-style yoghurt
  • 50g salted butter, at room temperature
  • A few sprigs of chive
  • Salt & pepper to taste

Let’s go…

  1. Place zest of one lemon in the mixing bowl, chop for 3 seconds / speed 7. Transfer to a bowl and set aside.
  2. Place the fresh salmon into the Varoma dish, making sure you leave gaps for the steam to circulate. Fill the mixing bowl with 700g water. Place Varoma dish into position and cook for 18 minutes / Varoma / Speed 1.
  3. Empty the water from the bowl. Remove the skin from the salmon. Flake it with a fork.
  4. Add 125g smoked salmon, 50g butter, 2 tbsp olive oil, 1/2 lemon juice, 2 egg yolks, 100g Greek-style yoghurt, the lemon zest and salt & pepper to taste to the mixing bowl. Mix for 20 seconds / speed 3. Scrape down the sides.
  5. Add the fresh salmon. Mix for 20 seconds / Reverse speed 1.
  6. Taste to check the seasoning as smoked salmon can vary greatly in its saltiness. Add more salt, pepper or lemon juice if needed. If you do, mix again for 20 seconds / reverse speed 1.
  7. Transfer to a serving bowl and refrigerate until needed.
  8. Serve sprinkled with chopped chive.

This pate is so easy to make yet I can promise you it impresses every single time.

Delicious. Bon appetit x

2- Very sexy and accurate kitchen scales – £8.99

Why we love this:

Yes, a Thermomix does have a weigh function which is fabulous, but sometimes, complete accuracy is needed and that’s when these little scales come in handy.

Very sexy, light, small and neat. Very accurate, easy to use and switch between weight variations. Everything you need from a kitchen scale really!

3- Silicone spatula – £11.99 for 4

Why we love these:

Any Thermomix user will tell you – you can never have too many silicon spatulas. Mine are always in the dishwasher! These are excellent value for money and are so good as they are much more pliable and therefore reach into every bit of the bowl. This particular pack comes with 2 large spatulas and 2 small ones, all heat resistant.

4- Thermispatula – £12 each

Why we love these:

Absolutely one of my favourite kitchen tool. For a more upmarket spatula, specifically designed for Thermomix users, look no further. The design and the quality of these spatulas are second to none. It fits perfectly with the Thermomix bowl and scraps every crumbs out easily even with the blades in the way.

They come in 6 different gorgeous colours too. The hard bit is picking one (or two?!).

5- Cuisipro 3 in 1 funnel – £12

Why we love this:

This is the only funnel anyone will ever need. The design is incredibly versatile, making this product so practical. The components screw securely with each other, which means that they are easily separated for a specific job. This funnel is a great partner to my Thermomix. It’s fantastic to fill jam jars, passata bottles, pepper mills, relishes, chutneys, sauces, infused oils and spice mixes. The design is so versatile, it works with pretty much any size jar or bottle.

Can not recommend them highly enough.

8- Vintage ceramic butter dish – £14.69

Why we love this:

The chances are that the Thermomix fan you’re researching a present for, makes their own butter. It’s so easy, it’d be rude not to!

So how about a very stylish dish to help them store their freshly made butter? I mean, look at it, isn’t it gorgeous? The warm and creamy colour makes it blends perfectly with any kitchen.

If you’re looking for a gift for a budding baker / a Paul Hollywood wannabe, then this is it!

12- Lekue bread maker – £18.99

Why we love this:

Thermomix mixes and kneads the dough in minutes. That’s why we love our machine, right!? Now, all we need is another magic tool to help with the proving and baking… that’s when the Lekue Bread Makers comes in. A high-quality silicone bowl that then closes into a ‘bag’ for proving and baking! Very clever indeed. it cooks with a super crust as the ‘bowl ‘ acts like a cloche.

13- Thermi Servebowls – £19 for extra small / £29 for a large one

Why we love these:

These fabulous insulated stainless steel bowls keep hot food hot and cold food cold for hours.
