Another HelloFresh hit we all really enjoyed. These guys are really really good at what they do, aren’t they?!

Their blurb says: “Pork loin steak is a really succulent cut of meat, making it the perfect thing to serve alongside a rich and creamy peppercorn sauce. Simple, comforting, and quick to make. Make this a go-to recipe.” We couldn’t agree more!

How ours was different:

  • Our pork was steamed in the Varoma dish which is actually a great way to keep it moist during cooking and make it healthier too. (and saves on washing up!!!).
  • We used a bit of cornflour to thicken the sauce.

Pork loin steak with creamy peppercorn sauce, roast potatoes and veggies. HelloFresh recipe in the Thermomix.

Serves 4

Active time: 10 minutes – Total time: 40 minutes.

Ingredients:

  • 4 large red potatoes or 6 medium ones
  • 1 tbsp dried thyme
  • 1tsp peppercorn
  • 1 shallot
  • a drizzle of olive oil
  • 2 packs fresh green beans (or you can use frozen)
  • 1 broccoli floret
  • 4 pork loin steaks
  • 100g creme fraiche
  • 5g cornflour

Let’s go…

  1. Preheat your oven to 200C.
  2. Chop the potatoes into 2cm chunks and pop on a lined baking tray. Drizzle over some olive oil and a pinch of salt & pepper. Sprinkle with 1 tbsp dried thyme and mix everything together to ensure the potatoes get a good coating. Spread out evenly in a single layer. Roast in the oven for 30 minutes, turning them halfway through cooking.
  3. In the meantime, add 1 tsp peppercorns to the mixing bowl. Grind for 5 seconds / speed 7. Scrape down the sides.
  4. Add a shallot, peeled & halved to the mixing bowl. Chop for 3 seconds / speed 5.
  5. Add a drizzle of olive oil and cook for 3 minutes / 100C / Speed 1.
  6. In the meantime, place the pork at the bottom of the Varoma dish, sprinkle with salt & pepper and place the green beans & broccoli florets at the top of the Varoma.
  7. Add 200ml boiling water and 1 chicken stock pot to the mixing bowl. Insert Varoma into place and cook for 20 minutes / Varoma / Speed 1 (or until the pork is cooked).
  8. Remove the Varoma and keep warm. Add 100g creme fraiche and 5g cornflour to the mixing bowl. Cook for 3 minutes / 90C / Speed 3 without measuring cup.
  9. To serve: slice each pork steak into 2cm strips. Add any escaped juice to the sauce. Serve with the vegetables, potatoes and sauce.

Chunky beef ragu – Thermomix adaptation of a Hello Fresh recipe

The one thing I hadn’t been able to master yet with the Thermomix, is bolognese sauce. No matter what setting I used, reverse speed, low speed etc, it always turned into complete mush, much to the disgust of the kids.

When Hello Fresh delivered the ingredients and recipe to make a beef ragu with spaghettis (a rather fancy name for spag bol), I remembered all the wonderful comments about fellow Thermomix blogger, Skinnymixer’s chunky bolognese recipe.

Here’s how I mixed both HelloFresh & Skinnymixer’s recipes. The result was perfectly chunky and rather delicious too, even if I say so myself!

For a gluten-free option, replace pasta with rice or potatoes

 


Serves 4

Active time: 5 minutes – Total time: 25 minutes – COST: £5.83

Ingredients:

  • 1 onion, halved – £0.17
  • 1 garlic clove – £0.05
  • 2 courgettes, roughly chopped – £0.41
  • 1 yellow pepper, roughly chopped – £0.50
  • 500g beef mince – £3.00
  • 2 tbsp soy sauce – £0.05
  • 1 tbsp dried oregano – £0.05
  • 2 cartons chopped tomatoes with garlic and onions – £0.75
  • 400g spaghetti – £0.85

Let’s go…

  1. Add one onion, halved, one garlic clove, 2 courgettes and 1 yellow pepper to the mixing bowl. Chop for 5 seconds / speed 5. Scrape down the sides.
  2. Add a good gulp of oil and cook for 5 minutes / 100C / Speed low.
  3. Add 2 tbsp soy sauce, 1 tbsp dried oregano, 2 cartons chopped tomatoes with garlic and onions and salt & pepper to taste.
  4. Insert your simmering basket into the bowl and put 500g beef mince inside. Cook for 10 minutes / 100C / Speed 1.
  5. In the meantime, boil some water in a large saucepan. Add a large pinch of salt. Bring to the boil and cook 400g spaghetti as per packet instruction.
  6. Carefully break up the mince with a spatula, cook for a further 10 minutes / 100C / Speed 1.
  7. Mix the cooked mince and the sauce together before serving.
  8. Drain the pasta and toss into the ragu.

With small kids to feed, we don’t like anything too hot in this house. What happens usually is that I cook everything mild and DH adds his own chilli flakes.

With this HelloFresh recipe, this is exactly what happened. When they say that this curry doesn’t bite as its north Indian spice is tempered by a creamy sauce with the added sweetness of coconut, they are absolutely right. There was nothing to be afraid of!

And DH was happy with his added chilli flakes too!

It is simply delicious and one I will do again and again.

Active time: 10 minutes – Total time: 25 minutes – COST: £8.72

Ingredients:

  • 1 onion – £0.17
  • 1 garlic clove – £0.05
  • 1 red pepper, sliced – £0.50
  • 1 small bunch coriander – £0.70
  • 500g fish mix – salmon, prawns, white fish – skinless and boneless but kept whole – £5.00
  • 25g desiccated coconut – £0.60
  • 4 cardamon pods – £0.05
  • 300g Basmati rice – £0.45
  • 2 tsp North Indian curry powder (1 pinch of each: fenugreek, black peppercorns, ginger, turmeric, cardamom, cumin, cloves, coriander, cinnamon, red chilli, cayenne) – £0.10
  • 1 tin plum tomatoes – £0.50
  • 1 vegetable stock pot – £0.31
  • 100g creme fraiche – £0.29

Let’s go…

  1. Add one onion, halved, one garlic clove and a small bunch of coriander to the mixing bowl. Chop for 5 seconds / speed 5. Scrape down the sides.
  2. Add a good gulp of oil and cook for 5 minutes / 100C / Speed low
  3. In the meantime, boil some water in a large saucepan. Add a large pinch of salt and 4 cardamom pods. Bring to the boil and add 300g rice. Cook as per packet instruction.
  4. Add the sliced red pepper and curry powder to the mixing bowl. Cook for 5 minutes / 100C / Reverse speed low.
  5. Add one tin plum tomatoes, 100ml water, one vegetable stock pot, 100g creme fraiche and 500g fish mix, keeping the pieces whole. Cook for 10 minutes / 100C / Reverse speed low.
  6. Add 25g desiccated coconut and cook for a further 5 minutes / 100C / Reverse speed low.
  7. Drain the rice, remove the cardamom pods.
  8. Serve the rice in a bowl with a good spoonful of fish curry on top. Sprinkle with coriander leaves for anyone that wants it!

Serves 4

Active time: 10 minutes – Total time: 25 minutes – COST: £8.61

Ingredients:

  • 2 carrots – £0.21
  • 1 red pepper – £0.50
  • 500g good quality pork sausage – £4.00
  • 2 tsp oregano – £0.05
  • 500g diced tomatoes – £1.00
  • 1 tbsp Worcester sauce – £0.05
  • 30g tomato puree – £0.08
  • 1 beef stock pot – £0.37
  • 400g spaghetti – £0.85
  • 200g baby spinach – £1.50

Let’s go…

  1. Put a large pan of water to boil.
  2. Add 2 carrots to the mixing bowl. Chop for 5 seconds / speed 5.
  3. Scrape down the sides. Add 1 red pepper, halved and deseeded. Chop or 5 seconds / speed 3. 
  4. Scrape down the sides and add a gulp of olive oil. Cook for 3 minutes / 100C / speed low.
  5. In the meantime, slice open the sausages, remove the meat and discard the skin.
  6. Add the sausage meat and 2 tsp oregano to the mixing bowl. Cook for 5 minutes / 100C / speed low.
  7. Add the chopped tomatoes, 1 tbsp Worcester sauce, 30g tomato puree, 200g baby spinach and 1 beef stock pot. Cook for 15 minutes / 100C / speed low without measuring cup.
  8. In the meantime, cook the spaghetti in a pan. Once cooked, drain and drizzle with olive oil.

Serve the pasta with bolognese on top.

Hellofresh has used turkey in this recipe – I am not a big fan of turkey and I think chicken would have made the dish even nicer.

I have also changed the recipe in the way that most of the vegetables are now ‘hidden’ in the meat sauce rather than ‘visible’ in the rice!

The original recipe uses green beans. We like broccoli here!

Creamy turkey masala with veggie-packed rice– A Hellofresh recipe in the Thermomix

Serves 4

Active time: 10 minutes – Total time: 30 minutes. COST: £9.20

Ingredients:

  • 2 onions – £0.34
  • 2 cm fresh ginger – £0.10
  • 4 garlic cloves – £0.10
  • 300g broccoli – £0.70
  • 2 carrots, peeled – £0.21
  • 1 large bunch coriander – £0.70
  • 4 turkey steaks, cubed – £3.50
  • 2 chicken stock pots – £1.25
  • 300g basmati rice – £0.60
  • 1 tbsp Garam Masala – £0.10
  • 4 tsp mustard seeds – £0.10
  • 500g tomato passata – £0.55
  • 300ml double cream – £0.95

Let’s go…

  1. Put a large pan of water to boil.
  2. Put 2 onions, halved, 2 cm ginger and 4 garlic cloves into the mixing bowl. Chop for 5 seconds / speed 5. Scrape down the sides.
  3. Add 2 carrots, roughly chopped. Chop for 5 seconds / speed 5. Scrape down the sides.
  4. Add a drizzle of olive oil and saute for 3 minutes / 100C / Speed 1.
  5. Chop the broccoli. Place them in the Varoma.
  6. In the meantime, chop the turkey steaks into roughly 2 cm chunks.
  7. Add the turkey to the mixing bowl together with a pinch of salt & pepper, 1 tbsp garam masala, 2 tsp mustard seeds. Cook for 5 minutes / 100C / Reverse speed low.
  8. Add 500g tomato passata and 1 chicken stock pot. Place the Varoma dish with the broccoli and cook for 15 minutes / 100C / Reverse speed low.
  9. In the meantime, cook the rice.
  10. When the meat is cooked, add 300ml double cream. Cook for a further 2 minutes / 100C / Reverse speed low. 

To serve:

Serve the rice, broccoli, and curry together. Sprinkle over with coriander.

Tasty chicken wraps with potato wedges and simple salad – A Hellofresh recipe in the Thermomix

Serves 4

Active time: 10 minutes – Total time: 30 minutes – COST: £8.90

Ingredients:

  • 6 red potatoes, sliced into wedges – £1.00
  • 8 chicken thighs (you can use breasts if you prefer) – £3.65
  • 2 tsp Central American spice mix (garlic, oregano, coriander, cumin and pepper) – £0.10
  • 2 tbsp honey – £0.20
  • 1 lime – £0.35
  • 1 bag ready made salad of your choice – £0.90
  • 1 cucumber, sliced – £0.50
  • 2 tbsp olive oil – £0.05
  • 1 pot sour cream – £0.65
  • 8 whole wheat soft tortilla – £1.50

Let’s go…

  1. Preheat the oven to 220C.
  2. Chop 8 chicken thighs into 2 cm cubes. Put in a mixing bowl with a good pinch of salt, pepper, 2 tbsp Central American spice mix, 1 tbsp honey and the juice of 1/2 lime. Mix everything and leave to one side.
  3. Chop the potatoes into wedges, put them in a lined baking tray, season with salt & pepper, drizzle with olive oil, mix well and roast in the oven for 25 – 30 minutes.
  4. Put the chicken in the TM bowl and cook for 15 minutes / 100C / Reverse speed low.
  5. In the meantime, chop the cucumber and add to the salad in a bowl. In a small bowl, combine the juice of 1/2 lime, 1 tbsp honey and 2 tbsp olive oil. Add a pinch of salt & pepper. This is your salad dressing.
  6. Warm the tortilla as per packet instructions.

To serve:

Bring salad, chicken and sour cream to the table, along with a big bowl of wedges. Assemble everything at the table. Fill the wraps with a little bit of sour cream, chicken and salad.

Baked Margherita Risotto – a HelloFresh recipe cooked in the Thermomix

So yesterday I cooked our first HelloFresh recipe in Momo the Thermomix – everyone loved the mild sausage chilli and we’ll definitely do it again.

Time for round 2 with this baked Margherita Risotto – I love a good Thermomix Risotto so couldn’t wait to try one with a twist!

Baked Margherita Risotto – a HelloFresh recipe cooked in the Thermomix

Serves 4 – Gluten free

Active time: 10 minutes – Total time: 1 hour

Ingredients:

  • 1 bunch basil
  • 2 shallots
  • 2 garlic cloves
  • 70g butter
  • 350g arborio rice (risotto rice)
  • 20g butter
  • 2 vegetable stock pots
  • 2 punnets cherry tomatoes
  • 2 balls mozzarella

Let’s go…

  1. Pick the basil leaves from their stalks, set the leaves aside and chop the stalks in your Thermomix – 5 seconds / speed 5.
  2. Set aside. Rinse and dry your Thermomix bowl.
  3. Place peeled shallots and garlic cloves into mixing bowl and chop 5 seconds / speed 5.
  4. Add 20g of butter and saute 3 minutes / 120C / speed 1.
  5. In the meantime, preheat your oven to 200C.
  6. Add the rice and saute 3 minutes / 120C / Speed 1 – Reverse speed without measuring cup.
  7. Add 800ml water, stock pots and a pinch of salt. Scrape bottom of mixing bowl with spatula to losen the rice. Cook 16 min / 100C / Speed 1 – Reverse speed. Place simmering basket instead of measuring cup onto mixing bowl lid (or it will splash everywhere! You’ve been warned!)
  8. About 10 minutes in, add the cherry tomatoes.
  9. When the risotto is cooked, transfer it into an oven proof dish. Stir in the remaining 50g of butter and the basil leaves. Cut the mozzarella into slices. Lay the slices on top, then grill for about 4 / 5 minutes.

To serve:

Serve with a simple cucumber salad.

Mild Sausage Chilli – a HelloFresh recipe cooked in the Thermomix

We love HelloFresh in this family but since the arrival of Momo the Thermomix last November, we’ve not really used them much as we were simply too busy with other recipes.

If you’re not familiar with HelloFresh, they’re a food box company. You pick the number of meals and number of people that suit your family and they deliver ALL the ingredients you need to cook delicious food, really quickly!

The clever people at HelloFresh sent us an offer we couldn’t refuse and bam we’re back as one of their customers so now they’re delivering 4 million & 16 meals per month!!

So here I am combining my delicious HelloFresh ingredients with a little help from my friend Momo the Momix!

Mild Sausage Chilli – a HelloFresh recipe cooked in the Thermomix

Serves 4 – Gluten free

Active time: 10 minutes – Total time: 1 hour

Ingredients:

  • 300g Basmati rice
  • 2 red peppers
  • 1 bunch chive
  • 60g cheddar cheese
  • 500g good quality pork sausage
  • 1 tin kidney beans
  • 1 1/2 tsp smoked paprika
  • 1 carton diced tomatoes with garlic & onions
  • 1 chicken stock pot
  • 150g sour cream
  • Optional chilli flakes

Let’s go…

  1. Halve and remove the core from the red peppers, put them in your Thermomix. Turn on for 5 seconds / speed 5 (I like mine finely chopped so that the kids can’t pick them out or even notice them. If you like bigger chunks, adapt the speed accordingly).
  2. Set aside. Rinse and dry your Thermomix bowl.
  3. Grate your cheddar cheese by adding it to the Thermomix bowl. Turn on for 5 seconds / speed 6.
  4. Set aside. Rinse and dry your Thermomix bowl.
  5. Slice open the sausage, put the meat into your Thermomix bowl with a dollop of olive oil.
  6. Turn on for 5 min / 120C / speed 1.
  7. Add salt & pepper to taste and the chopped red peppers. Turn on for 5 min / 120C / speed 1.
  8. Add the smoked paprika, chopped tomatoes and chicken stock pot, chilli flakes (optional) and kidney beans. Remove the measuring cup and top the lead with the simmering basket instead. Turn on for 10 min / 100C / speed 1.
  9. Done! Set aside and keep warm while you cook the rice.
  10. Wash your Thermomix bowl – add a tiny amount of washing up liquid, 1 litre of water. Turn on for 50 seconds / 100C / speed 5. Empty and rinse thoroughly.
  11. Place 1 litre of water, a pinch of salt and 20g olive oil in the bowl.
  12. Insert simmering basket. Add the rice and cook for 21 min / Varoma / speed 2.

To serve:

Pile up the rice, add the chilli, a sprinkle of grated cheese, a dollop of sour cream, and some chopped chive (I use scissors).
