The best chicken & bacon burger ever (as voted for by 2 adults, 3 teenagers and 2 four year olds!)

I wasn’t going to share this Gousto recipe as it didn’t require much help from our friend Momo the Thermomix. My entire family insisted I post it as it truly was the best chicken & bacon burger ever.

The Thermomix contribution was in making our very own ranch dressing.

The best chicken & bacon burger ever (as voted for by 2 adults, 3 teenagers and 2 four-year-olds!) – a Gousto recipe adapted by us.

Serves 4

Active time: 30 minutes – Total time: 45 minutes

Ingredients:

  • 2 large chicken breasts
  • 2 tbsp smoked paprika
  • 1 tsp Cayenne pepper (optional)
  • 300g potatoes
  • 2 garlic cloves
  • 2 spring onions
  • 1 tbsp Dijon mustard
  • 2 tbsp white wine vinegar
  • 100g natural yoghurt
  • 4 brioche rolls
  • 200g dry-cured streaky bacon
  • A few salad leaves
  • Sliced red onions

Let’s go…

  1. Preheat the oven to 200C.
  2. Slice your chicken breasts in half so that you end up with 2 flat pieces of chicken from each breast.
  3. Place paprika, cayenne pepper (optional), salt and pepper, together with the chicken in a ziplock bag or other freezer bag. Mix together, making sure the spices are evenly spread over the chicken and leave to marinate while you crack on with the rest.
  4. Cut the potatoes, skin on or off as you prefer, into chips.
  5. Put the chips on a large baking tray with a drizzle of vegetable oil and a big pinch of salt. Mix everything up.
  6. Cook in the oven for 30 minutes until the chips are golden.
  7. In the meantime put the peeled garlic cloves and spring onions into the Thermomix bowl. Chop for 7 seconds / speed 5
  8. Scrape down the sides
  9. Add the natural yoghurt, Dijon mustard, white wine vinegar, a big pinch of salt & pepper and a gulp of vegetable oil. Turn on for 10 seconds / speed 3. Set aside – that is your very own ranch sauce.
  10. Heat a drizzle of vegetable oil in a frying pan (preferably non-stick). Once hot, cook the streaky bacon for 3 minutes on each side. Once crisp, transfer the bacon onto kitchen paper to sponge off the excess oil. Keep the pan on the hob.
  11. Add the chicken to the pan and cook for 4 minutes on each side until the chicken is cooked through.
  12. In the meantime, cut the brioche rolls in half, put them in the oven, face up for 5 minutes (until they are toasted).

To serve:

Spread a good dollop of ranch sauce on the brioche buns, pile up the chicken, crispy bacon and a few salad leaves.

We like ours with added sliced red onions.

Serve with chips.

Moroccan chicken with lemony couscous. A Gousto recipe in the Thermomix

This recipe came as part of our Gousto Box and was quite heavily adapted to work in the Thermomix.

Moroccan chicken with lemony couscous – a Gousto recipe cooked in the Thermomix

Serves 4

Active time: 10 minutes – Total time: 45 minutes

Ingredients:

  • 60g blanched almonds
  • 2 onions, peeled and halved
  • 2 garlic cloves
  • 1 red chilli (optional)
  • One dollop olive oil
  • 2 tbsp ras el hanout (here’s how to make your own)
  • 1 heaped tbsp chicken stock or 2 chicken stock cubes
  • 100g dried apricots
  • 8 chicken thighs fillets
  • 2 lemons
  • 240g couscous

 

Let’s go…

  1. Preheat the oven to 180C.
  2. Place 60g blanched almonds on an oven tray and put in the oven for 10 minutes or until lightly browned. Leave to cool.
  3. In the meantime, add onions, garlic cloves and chilli (optional) to the mixer bowl. Chop for 5 seconds / speed 5.
  4. Scrape down the sides
  5. Add a dollop of olive oil and cook for 3 minutes / 100C / Speed 1 without measuring cup.
  6. Add the ras el hanout and cook for 2 minutes / 100C / speed 1 without measuring cup.
  7. Add the chicken stock and 300ml water. Cook for 10 minutes / 100C / speed 2 without measuring cup.
  8. In the meantime, chop the chicken thighs into thick strips, chop the dried apricots roughly, zest the lemons and cut into quarters.
  9. Add the chicken strips, diced apricots to the mixer bowl and 4 lemon quarters. Cook for 15 minutes / 100C / low speed / reverse speed with measuring cup.
  10. When done, squeeze out the pulp from the cooked lemons into the sauce and discard the rind. Careful: it will be hot!
  11. In the meantime, add the lemon zest and couscous to a bowl. Add boiling water according to packet instructions.
  12. To serve: plate the chicken on top of the couscous and sprinkle with the chopped toasted almonds. Serve with the remaining lemon wedges.

Chilli Beef Burritos & Lime mayo – Thermomix recipe

Burritos – one of my favourite food in the world. But never had I attempted to make some myself, let alone from scratch! I’m not sure why, because it’s really quite simple.

I am not sure this is the original burritos recipe you’d find in Mexico but still, it was amazingly delicious. Everyone LOVED them.

Chilli Beef Burritos & Lime Mayo – a Gousto recipe cooked in the Thermomix

Serves 4

Active time: 10 minutes – Total time: 20 minutes

Ingredients:

  • 150g basmati rice
  • 100g cheddar cheese
  • 2 tomatoes
  • 500g mince beef
  • 2 tsp smoked paprika
  • 2 tsp dried chilli flakes (optional)
  • 50g honey
  • 8 tortilla wraps (shop bought on this occasion)
  • 5 tbsp Thermomix mayonnaise (recipe in Basic Cook Book) – alternatively, you can use shop bought mayo.
  • 2 limes
  • 1 little gem lettuce
  • 1 bunch coriander

Let’s go…

  1. Preheat the oven to 220C.
  2. Cooked the rice in a pan (shock horror I know! But there’s just too much for Momo to do already!)
  3. Grate the cheese in your Thermomix bowl – 10 seconds, speed 7
  4. Set aside. Rinse and dry your Thermomix bowl.
  5. Chop the tomatoes – 2 seconds, speed 6.
  6. Set aside. Rinse and dry your Thermomix bowl
  7. Add beef mince to your bowl with a dollop of olive oil and a generous pinch of salt. Cook for 4 minutes / 100C / speed 1.
  8. Add the smoked paprika, chilli flakes (adapt amount to your taste buds!), chopped tomatoes and honey. Cook 5 minutes without lid / 100C / speed 1
  9. You will end up with quite mushy meat, which works very well for burritos.
  10. In the meantime, combine the juice of 1 lime with the mayo and a drizzle of olive oil.
  11. Add the tortillas to a baking tray and put in the oven for 4 minutes until warmed through.
  12. Meanwhile, hand shred the little gem finely.
  13. Cut the remaining lime into wedges & pick the leaves of the coriander.
  14. That’s it – you can now build your burritos with rice, chilli beef, little gem lettuce, grated cheese, lime mayo and as many leaves of coriander as you like!
