Light, fluffy and scrumptious banana honey bread. From ingredients to oven in under one minute thanks to Momo the Thermomix. 

  • 4 bananas – as ripe as possible
  • 125 grams unsalted butter, at room temperature
  • 100 grams brown sugar
  • 1 tsp vanilla essence
  • 2 eggs
  • 100 grams honey
  • 230 grams self raising flour
  1. Pre-heat your oven to 160C

  2. Add all the ingredients to the mixing bowl. Mix for 20 seconds / speed 5.

  3. Pour the mixture into a lined baking tin or silicone mould. Bake in the oven for 60 minutes.

  4. Serve warm with a hot chocolate or cup of tea!

Another batch of this deliciously moist honey banana bread is currently baking in my oven – ooooh I wish I could transfer the smell via the internet, it is divine!

What I love best about this recipe is that it is so easy to make and only uses ingredients most people will have in their cupboards already. And best of all: it goes from ingredients to oven in less than a minute!

I know it will disappear very quickly as soon as the kids come back from school.

I mean – who doesn’t love banana bread?! Loaded with ripe fruits, substitute some of the sugar for honey and you’ve got yourself a perfect recipe for a bit of weekend baking with the kids.

This is definitely the only banana honey bread recipe you will ever need, certainly the only one I use.

You can also use this as a basic banana bread recipe. Add raisins, walnuts or hazelnuts to make it a banana honey and nuts bread. Perfect for breakfast on the go!

Sometimes I even add frozen blueberries to make a blueberry banana cake.

These delicious pesto and pistachio muffins are soft, fluffy, very light and truly scrumptious.
Serve them straight from the oven with a nice green salad for a quick and healthy dinner. They also make a very good alternative to sandwiches for lunch boxes (Not in a school though because of the nuts!!). How about adding them to your scrumptious brunch?
Packed full of flavours, you can make them on Sunday and then freeze for the rest of the week. Cake for lunch anyone?!
The first time I made pesto and pistachio muffins, was to bring them for an aperitif, where they were gone in seconds – literally!
We’ve also eaten them as a family dinner, still warm from the oven with a side salad and some green beans.
They are simply scrumptious and a total doddle to make. This is a great recipe to use leftover pesto.

These delicious pesto and pistachio muffins are soft, fluffy, very light and truly scrumptious.

  • 80 grams gruyere cheese
  • 50 grams fresh basil
  • 50 grams pine nuts
  • 10 grams olive oil
  • 100 grams milk
  • 3 eggs
  • 180 grams self-raising flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 60 grams pistachio
  1. Pre-heat your oven to 180C.

  2. Add 80 grams gruyere cheese to the mixing bowl. Chop for 5 seconds / speed 5

  3. Add 50 grams fresh basil, 50 grams pine nuts, and mix for 5 seconds / speed 6.

  4. Add 10 grams olive oil, 100 grams milk, 3 eggs, 180 grams self-raising flour, and salt & pepper. Mix for 20 seconds / speed 4. 

  5. Add 60 grams pistachios and mix for 10 seconds / speed 3. 

  6. Transfer the dough to muffin cases / mould. Bake for 20 to 25 minutes, depending on size.

Warm yourself up from the inside with this delicious rhubarb and apple oat-nut crumble Thermomix recipe.

This classic combination is a favourite in every household, it certainly is in ours – and this is a way to make it even healthier. Because of the oat and nuts, it has a lower gluten content which makes it easier to digest.

Our Rhubarb and apple oat-nut crumble Thermomix recipe is one to love and this will be a dessert you return to time and time again. 

A little warning though – it makes for a rather sharp fruit combination. If you like things a bit sweeter, then add more brown sugar to the fruits (50 to 100g should be plenty!)

You thought a classic fruit crumble couldn’t be any more comforting? 

This Rhubarb and apple oat-nut crumble Thermomix recipe is adapted from a recipe I came across in the Tesco magazine.

  • 400 g rhubarb
  • 6 Granny Smith apples
  • 1 zest of 1 lemon
  • 50 g honey
  • 2 tsp cinnamon
  • 75 g butter, chilled
  • 75 g plain flour
  • 50 g oats
  • 100 g pecan or walnuts
  • 75 g brown sugar
  1. Preheat the oven to 180C.

  2. Place 6 Granny Smith apples, quartered and 400g rhubarb stalks, cut in chunks in the mixing bowls. Chop for 10 seconds / speed 4. Scrape down the sides.

  3. We like our fruits stewed – if you do too: add 50g honey, the zest of 1 lemon, 2 tsp cinnamon and 3tbsp water to the mixing bowl. Cook for 10 minutes / 100C / Reverse speed low without measuring cup.

    Otherwise, combine the chopped apple and rhubarb with 50g honey, the zest of 1 lemon, 2 tsp cinnamon in an oven proof dish. Just add an extra 20 minutes to the oven cooking time if you take that option.

  4. Divide the mixture between 6 ramekins and leave to cool.

  5. Rinse and dry the mixing bowl.

  6. Place 100g pecan or walnuts in the mixing bowl. Mix for 3 seconds / speed 4.

  7. Add 75g butter, chilled and cubed, 75g plain flour, 50g oats, and 75g demerara sugar to the mixing bowl. Press Turbo 3 times. 

  8. Sprinkle evenly over the apple and rhubarb mixture and bake in preheated oven for 20-25 minutes. 

  9. Serve with Thermomix vanilla custard, vanilla ice cream or cream.

Another rainy and cold Saturday afternoon here in the UK usually means baking in this house.

One of the twins wanted banana cake, the other a blueberry cake – so how about combining the 2?

The result: a tender, golden loave, a divine smell throughout the house and some very happy children!

This deliciously moist loaf cake is best served still warm in my opinion.

 

Serves 6

Active time: 5 minutes – Total time: 1h10

Ingredients:

  • 125g butter, at room temperature
  • 150g sugar
  • 2 eggs
  • 3 ripe bananas
  • 1 tsp vanilla extract
  • 225g flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 30g milk
  • Zest of one lemon (optional)
  • 100g fresh blueberries – or fully defrosted if using frozen ones.

 

Let’s go…

  1. Preheat your oven to 160C
  2. Add 150g sugar and 125g butter to the mixing bowl. Mix for 60 seconds / speed 4.
  3. Add 2 eggs, 3 ripe bananas and 1 tsp vanilla extract. Mix for a further 60 seconds / speed 5.
  4. Add 225g flour, 1tsp baking powder, 30g milk, zest of one lemon and 1/2 tsp salt. Mix for 60 seconds / speed 4.
  5. Pour the cake batter into a pre-greased cake tin. Fold in 100g fresh blueberries.
  6. Bake for 60 minutes or until a clean knife inserted comes out clean

Happy Epiphany!

When you thought the food fest was over, everyone was on a diet and on dry January, comes a very French national obsession with the Galette des Rois (King’s cake). It celebrates the arrival of the Three Wise Men in Bethlehem.

Since the 14th Century, this dessert has been served but only once a year and every single child in France is waiting with great anticipation for Epiphany (6th January).

If you’re passing through France right now, you will undoubtedly notice these delicious cakes everywhere, in your local boulangerie obviously but also in every supermarket up and down the country.

This scrumptious-looking cake is made of puff pastry, filled with frangipane – sweet almonds, butter, eggs, and sugar. It’s flaky, sweet and best served warm, straight out of the oven.

But the reason children love this cake so much is much more than because of its delicious taste, it is also brought by the excitement of finding out whether you will be the lucky one to discover the ‘Feve’ (charm), hidden inside the cake and therefore become the King or Queen for the day.


 

Serves 8

Active time: 10 minutes – Total time: 55 minutes

Ingredients:

  • 2 sheets of all butter puff pastry, ready rolled
  • 80g unsalted butter at room temperature
  • 80g caster sugar
  • 80g ground almonds
  • 2 eggs
  • 1 tsp rum
  • 1 tsp vanilla extract
  • A bit of milk

Let’s go…

  1. Preheat your oven to 180C
  2. Add 80g unsalted butter to the mixing bowl. Turn on for 1 minute / speed 4, to soften it. Scrape down the sides.
  3. Add the whisk, 80g caster sugar, 80g ground almond, 1 egg, 1 tsp rum, and 1/2 tsp vanilla extract. Mix for 3 minutes / speed 2 increasing progressively to speed 4.
  4. To assemble: using a plate as a guide, cut out a 20cm round from a pastry sheet and a slightly bigger one from the other sheet.
  5. Place the smaller circle on a baking tray lined with greaseproof paper.
  6. Spoon the almond mixture into the centre of the smaller circle and spread it evenly over the pastry, leaving a clear margin around the edge. Add the ‘feve’ (charm). In the olden days, they used to use a broad bean! Tip: the nearer the edge it is placed, the less likely you are to cut right through it when slicing the cake.
  7. Cover with the bigger circle and press the edges firmly together using your finger and thumb.
  8. Lightly beat the egg with a few drops of milk and brush the galette with the mixture. Using the back of a knife, design a spiral of curved sunshine rays starting from the centre of the galette and extending right to the edge. Or you can simply criss-cross the top of the galette with a knife.
  9. Bake for 45 minutes.
  10. Let cool for 10 minutes and serve while still warm.

The tradition wants that the youngest person – usually a child, but can be equally fun with adults only – present goes under the table and randomly allocates each slice of galette to the guests.

Here’s another very very popular recipe on the French Thermomix forums… when you talk about brioche, everyone raves on about this particular Buchty type.

Having now, finally, tried it myself, Ooooh Emmmm Geeee is all I can say.

It is a soft and moist brioche, which is perfect for breakfast or after school snack.

It’s also made without butter!

It is often said that the recipe originated from Germany, but in fact, the origin of the ‘Buchteln’ is the region of Bohemia.

Serves 8

Active time: 10 minutes – Total time: 3 hours 10 minutes

Ingredients:

  • 90g milk
  • 100g caster sugar
  • 10g fresh yeast
  • 200g creme fraiche
  • 2 eggs
  • 500g plain flour
  • 1/2 tsp salt

Let’s go…

  1. Add 90g milk, 100g caster sugar and 10g fresh yeast to the mixing bowl. Mix for 3 minutes / 37C / Speed 1.
  2. Add 200g creme fraiche and 2 eggs. Mix for 3 minutes / 37C / Speed 1.
  3. Add 500g flour and 1/2 tsp salt. Knead for 5 minutes / Kneading mode.
  4. Transfer into a bowl, cover with cling film or a damp cloth and leave to rest for 2 hours.
  5. Divide the dough into 8 even pieces. Roll into balls and arrange on a lined baking tray. Or leave the dough whole.
  6. Brush the buns with egg. Sprinkle with sugar if you wish to.
  7. Loosely cover with cling film and leave for about 30 minutes.
  8. In the meantime, preheat your oven to 150C.
  9. Pour a cup of water into a baking tray at the bottom of the oven to create steam.
  10. Bake for 25 minutes.

Apples are perfect for cake recipes. They add a great taste as well as moisture. So they’re brilliant in muffins!

These particular recipe takes no time at all to throw together, they’re perfect for breakfast, packed lunches or for an after-school snack.

Sweet, wonderful, homemade, cinnamon, apple, autumn smells throughout your house. That’s what I’m talking about.

We use whole wheat flour, and less sugar in this recipe to make it all a bit healthier.

Active time: 5 minutes – Total time: 20 minutes

Ingredients:

  • 1 apple, skin on, quartered
  • 240ml milk
  • 2tsp white vinegar
  • 70g brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 130g self raising flour
  • 200g whole wheat flour
  • 1tsp baking soda
  • 1tsp baking powder
  • A pinch of salt
  • 1tsp allspice

Let’s go…

  1. Preheat your oven to 180C
  2. Add apple to the mixing bowl. Grate for 5 seconds / speed 7.
  3. Add all the other ingredients to the mixing bowl. Mix for 1 minute / speed 4. 
  4. Fill individual muffin cases. Bake for 15 minutes.

Serves 4

Active time: 2 minutes – Total time: 8 minutes

Ingredients:

Prune pudding

  • 1 x 290g tin of pitted prunes
  • 100g plain flour
  • 50g soft dark brown sugar
  • 50g unsalted butter, room temperature
  • 1 heaped tsp ground ginger
  • 1/2 a level tsp bicarbonate of soda
  • 1 egg
  • 75ml milk
  • Golden syrup & creme fraiche to serve.

Let’s go…

  1. Add 100g plain flour, 50g soft dark brown sugar, 50g unsalted butter, 1 heaped tsp ground ginger, 1/2 tsp bicarbonate soda,  one egg and 75ml milk into the mixing bowl. Mix for 30 seconds / Speed 4.
  2. Get 4 cups that will all fit in your microwave at the same time. Tip the prunes into a bowl, then spoon 1 tbsp of their syrupy juice into each of the cups. Divide the prunes between the 4 cups and top with the cake batter.
  3. Pop the puddings into the microwave to cook on full power for 6 minutes. Drizzle with a bit of golden syrup and top with creme fraiche.

How easy was that!

Apple clafoutis (kla-FOO-tee) – with or without a Thermomix

A clafouti (pronounced kla-FOO-tee) is traditionally a rustic French dessert. It consists of fruits baked in a custard-like batter similar to pancake batter. It’s simply delicious and brings back so many fond memories of summers at my grandparent’s house!

For gluten free, replace plain flour by your favourite gluten-free option.


Active time: 10 minutes – Total time: 45 minutes

Serves 4

Ingredients:

  • 4 big apples (or 6 medium ones) – mixed variety only adds to the taste!
  • 50g plain butter
  • 4 eggs
  • 125g caster sugar
  • A few drops of vanilla essence
  • 80g plain flour
  • 300g full fat milk
  • A pinch of salt

Let’s go…

  1. Preheat your oven to 200C.
  2. Lightly grease a 20cm oven proof dish. Peel and slice 4 apples. Place them in the greased dish.
  3. Add 50g plain butter to the TM bowl. Melt for 3 minutes / 60C / Speed 2.
  4. Add 80g plain flour, 125g caster sugar, 4 eggs and 300ml full fat milk. Mix for 1 minutes / speed 3. 
  5. Pour the batter over the apples.
  6. Bake in the oven for 30 to 40 minutes.

Best served still warm with a creme anglaise (or a good old custard will be just as good!)

Moist muffins with a lovely jam centre, my family and I absolutely adore these little mouthfuls of yumminess.

Active time: 10 minutes – Total time: 25 minutes

Ingredients:

  • 150 ml milk
  • 2 eggs
  • 100 g sunflower oil
  • 180 g self-raising flour
  • 100 g sugar
  • a few drops of vanilla extract
  • Strawberry jam (or any other jam of your choice)

Let’s go…

  1. Preheat your oven to 180C
  2. Add 2 eggs, 100g caster sugar and a few drops of vanilla extract to the mixing bowl. Mix for 20 seconds / speed 3.
  3. Add 150ml milk, 100g sunflower oil, 180g self-raising flour. Mix for 1 minutes / speed 4.
  4. Half fill individual muffin cases. Add a spoonful of jam. And add more batter to 3/4 full. Bake for 15 to 20 minutes.
