Greek chicken and spinach risotto Thermomix recipe

Risotto is probably the most popular dish within the Thermomix community and it’s not difficult to understand why. 

The hardest part about making risotto is usually the constant stirring. That bit is completely taken care off by the Thermomix. It does all the hard work for you and makes absolutely stunning risottos. 

This particular Greek chicken & spinach risotto Thermomix recipe didn’t disappoint and it’s now definitely in the running for my top 5 Thermomix risottos of all times. 

I got the inspiration from this One pot Greek chicken risotto recipe on the Casa de Crews website. 

Who says risotto can’t be Greek? Sweet onions, crumbled feta cheese, flavourful herbs, such as dill and oregano make for an amazing combination. 

It’s also full of good stuff and gluten-free.

10 minutes prep and the rest of making this Greek chicken and spinach risotto Thermomix recipe is totally hands-free. If that doesn’t make for a perfect weeknight meal, I am not sure what does!

  • 1 onion
  • 3 garlic cloves
  • 4 tbsp olive oil
  • 2 tsp garlic powder
  • 1½ tsp dried oregano
  • 1 tsp dill
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • Salt and pepper (to taste)
  • 1 lb. boneless skinless chicken breasts
  • 400 g arborio rice
  • 120 g baby leave spinach
  • 600 ml vegetable stock
  • 200 ml dry white wine
  • 200 g feta cheese
  • To serve (optional: olives, cucumber, cherry tomatoes, slices of lemon.)
  1. Place 1 onion, halved and 3 garlic cloves into mixing bowl and chop 5 seconds / speed 5. Scrape down the sides.
  2. Add 4 tbsp olive oil and saute 3 minutes / 120C / speed 1.
  3. While the Thermomix is sauteing, add 2 tsp garlic powder, 1½ tsp dried oregano, 1 tsp dill, 1 tsp onion powder, 1 tsp paprika, 1 tbsp balsamic vinegar and 1 tbsp lemon juice.
  4. Chop 8 chicken thighs in 8 pieces. Add to the mixing bowl. Cook for 10 minutes / 100C / Reverse speed low.
  5. Add 400g arborio rice. Stir in with the chicken a spatula. Saute 3 minutes / 120C / Speed 1 – Reverse speed without measuring cup. Scrape bottom of mixing bowl with a spatula to loosen the rice.
  6. Add 120g fresh spinach, 600ml vegetable stock, 200ml dry white wine and a pinch of salt.  Cook 10 minutes / 100C / Speed 1 – Reverse speed. Place simmering basket instead of measuring cup.
  7. Add 200g feta, crumbled and cook for a further 10 minutes / 100C / Speed 1 – Reverse speed. Place simmering basket instead of measuring cup.
  8. Serve topped with sliced cucumber, more feta cheese, cherry tomatoes, slices of lemon.

Serves 4

Active time: 10 minutes – Total time: 1 hour – cost: £6.57

Ingredients:

  • 3 shallots, peeled – £0.45
  • 3 medium courgettes, sliced – £0.61
  • 60g grated parmesan – £0.87
  • 1 tbsp olive oil – £0.03
  • 250g arborio rice – £0.62
  • 250ml single cream – £0.80
  • 120g smoked salmon trimmings – £3.00
  • 800ml vegetable stock – £0.19

Let’s go…

  1. Place peeled shallots into mixing bowl and chop 5 seconds / speed 5.
  2. Scrape down the sides. Add 1tbsp olive oil and saute 3 minutes / 120C / speed 1.
  3. Add butterfly whisk.
  4. Add courgette slices, saute 3 minutes / 120C / Speed 1 – Reverse speed without measuring cup.
  5. Add 250g arborio rice. Saute 3 minutes / 120C / Speed 1 – Reverse speed without measuring cup.
  6. Add 800ml vegetable stock and a pinch of salt. Scrape bottom of mixing bowl with a spatula to loosen the rice. Cook 16 min / 100C / Speed 1 – Reverse speed. Place simmering basket instead of measuring cup.
  7. Add 250ml single cream, 4 slices smoked salmon and 60g grated parmesan. Mix for 20 seconds / speed 2.
  8. Serve topped with remaining smoked salmon.

Baked Margherita Risotto – a HelloFresh recipe cooked in the Thermomix

So yesterday I cooked our first HelloFresh recipe in Momo the Thermomix – everyone loved the mild sausage chilli and we’ll definitely do it again.

Time for round 2 with this baked Margherita Risotto – I love a good Thermomix Risotto so couldn’t wait to try one with a twist!

Baked Margherita Risotto – a HelloFresh recipe cooked in the Thermomix

Serves 4 – Gluten free

Active time: 10 minutes – Total time: 1 hour

Ingredients:

  • 1 bunch basil
  • 2 shallots
  • 2 garlic cloves
  • 70g butter
  • 350g arborio rice (risotto rice)
  • 20g butter
  • 2 vegetable stock pots
  • 2 punnets cherry tomatoes
  • 2 balls mozzarella

Let’s go…

  1. Pick the basil leaves from their stalks, set the leaves aside and chop the stalks in your Thermomix – 5 seconds / speed 5.
  2. Set aside. Rinse and dry your Thermomix bowl.
  3. Place peeled shallots and garlic cloves into mixing bowl and chop 5 seconds / speed 5.
  4. Add 20g of butter and saute 3 minutes / 120C / speed 1.
  5. In the meantime, preheat your oven to 200C.
  6. Add the rice and saute 3 minutes / 120C / Speed 1 – Reverse speed without measuring cup.
  7. Add 800ml water, stock pots and a pinch of salt. Scrape bottom of mixing bowl with spatula to losen the rice. Cook 16 min / 100C / Speed 1 – Reverse speed. Place simmering basket instead of measuring cup onto mixing bowl lid (or it will splash everywhere! You’ve been warned!)
  8. About 10 minutes in, add the cherry tomatoes.
  9. When the risotto is cooked, transfer it into an oven proof dish. Stir in the remaining 50g of butter and the basil leaves. Cut the mozzarella into slices. Lay the slices on top, then grill for about 4 / 5 minutes.

To serve:

Serve with a simple cucumber salad.

Here are top family-friendly Thermomix recipes that are easy to put together, especially if you have a Thermomix, have been tried and tested and enjoyed by our family and will cost you less than £10 in total.

Meal planning, together with online shopping – which removes most of the temptation supermarkets rely on so heavily to make you part with more money that you need to – is the single most effective thing you can do to save money. Period.

Pick 5 dinners and buy only the ingredients you need. It will not only save you hundreds of pounds a year but also avoid a huge amount of unnecessary food waste. Win-win!
